I have started a gluten free diet, actually a couple of weeks ago. It has been a challenge. If there is one thing in this world that I love it's bread and pasta. All kinds of breads, bagels, cinnamon rolls, yeast rolls, garlic bread, french baguettes, and pasta's, oh do I love pasta. But I have had stomach issues for a long time, and am already on a restricted diet for this and other medical reasons, so I decided that I should give eating gluten free, to the best of my ability, a try. It can't hurt right.
So, I was thrilled when I saw this recipe via Two Ellie Blog.
I was skeptical but it totally surprised me and was delicious, cold, and creamy. I didn't even feel like I had given something up.
Now today I am baking Gluten Free brownies. I hope that they are just as good.
I am not the type of person to eat so whole and naturally. Don't get me wrong, I make good choices, buy good foods, some are organic, but I am not above eating at McDonalds occasionally, I think it's a good balance, for me anyhow, so this going gluten free has had it's challenges. I have been basically eliminated most all processed foods, and guess what, I feel better. ARGH!!! I guess it is a good thing.
Try this recipe for Ice Cream even if you aren't gluten free and I will keep you posted on the brownies.
